We aim to bring real food back into the kitchen, and to bring back the initiative to choose what we eat.
We are doing this through fermented foods.
When you are depressed,
a bowl of warm soup warms your heart.
When you feel tired,
you feel refreshed by homemade food.
What comes to mind when you think of fermented foods? From miso, soy sauce, sake, yogurt, tempe, natto (fermented soybeans), bread, and amazake (sweet sake), to rare fermented foods such as saba heshiko (pickled mackerel), blowfish roe, iburigakko (Daikon radish dried, soaked in rice bran and smoked).
What they all have in common is that many microorganisms are involved in the process of making these fermented foods. For example, koji mold works on rice to produce flavor and sweetness, lactic acid bacteria make yogurt, yeast expands bread, and so on.
When microorganisms work on materials, they produce foods that taste better, have more nutritional value, and have much better preservation properties than would be possible by human hands.
Since ancient times, humans have been grateful for the benefits of the fermentation process brought about by microorganisms. On the other hand, the microorganisms that control fermentation have also been supported by human hands in their energetic fermentation and have built a complementary relationship with each other.
Life is energized by life.
The word "life" here refers to both microorganisms and human beings.

What do we do in Kyoto Arashiyama? What do we sell? We are based in Kyoto Arashiyama. In Japan, we focus on the theme of "fermentation" and operate cafeterias and stores selling goods.
We are also involved in the production and wholesale, fermentation workshops, and producing related events.
In overseas, we offer online fermentation workshops and export some of our products for sale.
We would like to further promote the simple Japanese "fermentation-based homemade diet" to people overseas.

Our café/restaurant, retail store, and production base are all located in Arashiyama, Kyoto. Arashiyama is a place where many tourists come from abroad to visit the “Togetsu Bridge“ and the bamboo road. Our store is located a little off the popular area, but we hope you will visit us when you come to Kyoto.
